A heartwarming chicken soup with creamy broth, spices, and herbs, perfect for busy weeknights and family gatherings.

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion (diced)
  • 3 garlic cloves (minced)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 3 cups shredded rotisserie chicken
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan
  • Salt and pepper to taste
  • Optional: a handful of baby spinach or kale

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and cook for about 5 minutes until softened.
  3. Stir in the minced garlic and thyme, cooking for another minute until fragrant.
  4. Add in the shredded rotisserie chicken, allowing it to mix with the aromatics for a couple of minutes.
  5. Pour in the chicken broth and bring the mixture to a gentle simmer. Let it cook for about 10 minutes to meld the flavors together.
  6. Lower the heat and stir in the heavy cream and grated parmesan. Season with salt, pepper, and optional red pepper flakes.
  7. If desired, fold in a handful of baby spinach or kale until just wilted. Serve hot.

Notes

Serve with crusty bread or garlic knots for dipping. Best enjoyed with a light salad and a glass of white wine.
