A comforting one-skillet meal featuring tender chicken in a creamy sun-dried tomato sauce that promises to impress.

  • 3 pounds boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons minced garlic
  • ¾ cup low-sodium chicken broth
  • ½ cup heavy cream
  • ½ cup grated fresh parmesan cheese
  • 1 cup sun-dried tomatoes
  • Fresh basil for garnish
  • Salt and pepper to taste
  • Oregano and red pepper flakes (optional)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken and cook for 5-7 minutes on each side until golden brown. Remove the chicken and set aside.
  3. Sauté the minced garlic in the same skillet until fragrant, about 30 seconds.
  4. Deglaze the skillet with chicken broth, scraping up any brown bits from the bottom.
  5. Stir in the heavy cream and grated parmesan cheese until smooth.
  6. Add the sun-dried tomatoes and optional herbs like oregano or red pepper flakes.
  7. Return the chicken to the skillet and let it simmer for 10-15 minutes until heated through and coated in sauce.
  8. Garnish with fresh basil and serve over pasta or rice.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in a skillet or microwave, adding a splash of chicken broth or cream if the sauce thickens.
