A comforting dish featuring seared chicken breasts in a rich and creamy sun-dried tomato sauce, perfect for romantic dinners or family gatherings.

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 4 cloves Minced garlic
  • 1 cup Low-sodium chicken broth
  • 1 cup Heavy cream
  • 1/2 cup Grated fresh parmesan cheese
  • 1/2 cup Sun-dried tomatoes (packed in oil)
  • 1 teaspoon Dried oregano
  • 1/4 teaspoon Crushed red pepper flakes
  • 1/4 cup Chiffonaded fresh basil
  • 1/4 cup Grated fresh parmesan cheese (for an extra cheesy finish)

Instructions

  1. Season the chicken breasts generously with salt and black pepper on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear them for about 6-7 minutes on each side until they are cooked through and golden brown. Once done, remove from the skillet and set aside.
  3. In the same skillet, reduce the heat to medium and stir in the minced garlic. Sauté for 1-2 minutes until fragrant, ensuring not to burn it.
  4. Pour in the low-sodium chicken broth, scraping up any flavorful bits stuck to the skillet. Bring it to a gentle simmer.
  5. Stir in the heavy cream, grated parmesan, sun-dried tomatoes, dried oregano, and crushed red pepper flakes. Let it simmer for 3-4 minutes until it’s thickened to your liking.
  6. Return the seared chicken to the skillet, spooning the rich sauce over it. Continue cooking for an additional 2-3 minutes.
  7. Finish your dish with fresh basil and an extra sprinkle of parmesan cheese before serving.

Notes

Pair with rice or mashed potatoes, and consider adding a side of steamed vegetables or salad for a complete meal.
