  • 2 pieces Boneless, Skinless Chicken Breasts
  • 2 tbsp Olive Oil
  • 1 tsp Black Pepper
  • 1 tbsp Italian Seasoning
  • 1 tsp Paprika
  • 2 tbsp Butter
  • 3 cloves Garlic, minced
  • 1 cup Sun-Dried Tomatoes, chopped
  • 1 cup Low-Sodium Chicken Broth
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese, shredded
  • 2 cups Baby Spinach

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Season the chicken breasted with black pepper and sear until golden brown, about 5-7 minutes on each side, then remove and set aside.
  2. Add the butter to the skillet and sauté the minced garlic until fragrant, about 30 seconds.
  3. Stir in the chopped sun-dried tomatoes, Italian seasoning, and paprika, letting these flavors meld for about a minute.
  4. Pour in the chicken broth and heavy cream, bringing the mixture to a gentle simmer.
  5. Return the seared chicken to the skillet and let it simmer in the sauce for 3-4 minutes.
  6. Add the frozen cheese tortellini and cook according to package instructions, usually 3-5 minutes until tender.
  7. Stir in the baby spinach and parmesan cheese, mixing until the cheese melts and the spinach wilts. Serve warm.

Notes

Use low-sodium chicken broth to control saltiness. Don’t rush searing the chicken; a nice golden crust adds depth. Add red pepper flakes for a spicy kick if desired.
