  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning
  • 0.5 tsp smoked paprika
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 0.5 cup chopped sun-dried tomatoes, packed in oil and drained
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 0.25 tsp red pepper flakes (optional)
  • 0.75 cup freshly grated parmesan cheese
  • 18 oz cheese tortellini, fresh or frozen
  • 2 cups loosely packed baby spinach
  • 1 tbsp chopped fresh basil or parsley (optional, for garnish)
  • Lemon wedges, for serving

Instructions

  1. Season the chicken: In a bowl, season the chicken pieces with kosher salt, black pepper, Italian seasoning, smoked paprika, and flour until well-coated.
  2. Sear the chicken: Heat olive oil in a large deep skillet over medium-high heat. Sear the chicken for about 6–8 minutes, stirring occasionally until golden and cooked through. Transfer it to a plate and set aside.
  3. Cook aromatics: Lower the heat to medium. Add butter to the same skillet, then stir in minced garlic and chopped sun-dried tomatoes. Cook for about 30 seconds or until fragrant.
  4. Create the sauce: Pour in the chicken broth, scraping up any browned bits from the pan. Add the heavy cream and optional red pepper flakes, bringing the mixture to a gentle simmer.
  5. Add the tortellini: Stir in the tortellini, ensuring they are nicely coated in the creamy sauce. Cover and reduce the heat to medium-low, cooking until the tortellini are tender, about 5–9 minutes based on the brand.
  6. Incorporate spinach: Fold in the baby spinach until wilted, and return the chicken along with its juices to the skillet.
  7. Cheesy goodness: Gradually sprinkle in the parmesan cheese, stirring until the sauce is smooth and slightly thickened. Taste and adjust the seasoning if necessary.
