A comforting dish featuring tender chicken breasts in a creamy garlic sauce with cheesy tortellini, ideal for weeknight dinners or special occasions.

  • lbs boneless, skinless chicken breasts
  • ½ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • ½ teaspoon paprika
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 teaspoons minced garlic
  • ½ cup sun-dried tomatoes in oil
  • 1 cup low-sodium chicken broth
  • 2 cups heavy cream
  • 1 cup shredded parmesan cheese
  • 2 cups baby spinach, chopped
  • 19 oz frozen cheese tortellini

Instructions

  1. Pat the chicken breasts dry and season all sides with black pepper, Italian seasoning, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken and cook for 6-8 minutes until golden brown and cooked through. Remove the chicken and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and sun-dried tomatoes, cooking for about 30 seconds until fragrant.
  4. Pour in the chicken broth and heavy cream, then add Italian seasoning, black pepper, and paprika. Whisk until bubbling and thickening.
  5. Stir in the parmesan cheese until melted and a creamy sauce forms.
  6. Return the chicken to the skillet, then add the chopped spinach and frozen tortellini. Reduce heat and simmer for about 5 minutes until the spinach wilts and the tortellini is cooked through.
  7. Serve hot, garnished with extra parmesan cheese and fresh herbs.

Notes

Always pat your chicken dry before seasoning for a better sear. Adding a splash of lemon juice at the end can give a zesty twist.
