A romantic chicken dish with creamy sauce, sun-dried tomatoes, and mozzarella, served over ravioli.

  • 4 chicken breasts
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 package of ravioli (fresh or frozen)
  • Parmesan cheese for serving
  • Fresh basil for garnish
  • Olive oil for cooking

Instructions

  1. Start by heating olive oil in a large skillet over medium heat.
  2. Season your chicken breasts generously with salt, pepper, and Italian seasoning.
  3. Sear the chicken for about 6-7 minutes on each side until it’s nicely browned and cooked through.
  4. Remove the chicken from the skillet and set aside.
  5. Add the minced garlic to the same skillet and sauté for approximately a minute until fragrant.
  6. Now, add the chopped sun-dried tomatoes, chicken broth, and heavy cream. Allow it to come to a gentle simmer.
  7. Stir in the shredded mozzarella cheese and let it melt into the creamy sauce.
  8. Return the cooked chicken to the skillet and allow it to simmer in the sauce for an additional 5-10 minutes to meld the flavors.
  9. While the chicken simmers, cook the ravioli according to package instructions. Once cooked, drain and set aside.
  10. To serve, plate the ravioli, top with the chicken, and drizzle the creamy sauce over everything. Finish with a sprinkling of Parmesan cheese and a garnish of fresh basil.

Notes

Serve with a simple arugula salad or garlic bread, and pair with a crisp white wine.
