Delicious bite-sized treats that combine breakfast sausage, cheddar cheese, jalapeños, and blueberries wrapped in fluffy pancake batter, perfect for brunch or quick breakfasts.

  • 1 pound breakfast sausage
  • 2 cups Hungry Jack Pancake Mix
  • 1 cup water
  • 1/4 cup maple syrup
  • 1 cup cheddar cheese, shredded
  • 1/4 cup diced jalapeños
  • 1/2 cup blueberries

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.
  2. In a skillet over medium heat, cook the breakfast sausage until browned and crumbly. Set aside to cool slightly.
  3. In a large bowl, combine the pancake mix, water, and maple syrup, mixing gently until just combined.
  4. Fold in the cooked sausage, cheddar cheese, jalapeños, and blueberries until evenly distributed.
  5. Spoon the batter into the muffin tin, filling each cup about two-thirds full.
  6. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  7. Let cool slightly before removing from the muffin tin. Enjoy warm!

Notes

Serve warm with extra maple syrup or sour cream. Best paired with fresh fruit or crispy bacon.
