Delicious handheld snacks combining breakfast sausage, fluffy eggs, and sweet pancake batter, perfect for brunch or meal prep.

Ingredients

  • Breakfast sausage
  • Eggs
  • Pancake mix
  • Maple syrup
  • Salt
  • Pepper
  • Cooking spray

Instructions

  1. Cook the breakfast sausage in a pan over medium heat until browned, breaking it apart as you go.
  2. Mix the pancake mix with water and stir in a hint of maple syrup.
  3. Whisk together the eggs, adding a pinch of salt and pepper.
  4. Combine the cooked sausage with the whisked egg mixture.
  5. Grease a muffin tin with cooking spray and pour pancake batter into each cup, filling them halfway.
  6. Spoon the sausage and egg mixture on top of the batter in each cup.
  7. Add more pancake batter on top to cover the filling.
  8. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes or until golden brown.
  9. Allow the bites to cool slightly before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven or microwave.
