A quick and delightful twist on breakfast featuring cheesy muffin halves topped with eggs and your choice of bacon or sausage.

Ingredients

  • 2 English muffins, split in half
  • 4 eggs
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup cooked bacon or sausage, crumbled
  • 1/4 cup pizza sauce
  • 1/4 tsp dried oregano
  • Salt and pepper, to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Arrange the split English muffin halves on a baking sheet.
  3. Spoon about 1 tablespoon of pizza sauce onto each muffin half.
  4. Evenly sprinkle shredded mozzarella cheese over the sauce.
  5. Carefully crack an egg on top of each muffin half.
  6. Scatter crumbled bacon or sausage over the cheese and eggs.
  7. Season with dried oregano, salt, and pepper.
  8. Bake in the oven for 10-12 minutes, until the egg whites are set but the yolks remain runny.
  9. Garnish with fresh parsley if desired.
