A nutritious and quick breakfast featuring fluffy scrambled eggs with fresh spinach and sautéed mushrooms.

Ingredients

  • 4 fresh eggs
  • 1 cup fresh spinach
  • 1 cup mushrooms, sliced
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil or butter in a skillet over medium heat.
  2. Add the sliced mushrooms and sauté them until they’re tender, about 3-4 minutes.
  3. Stir in the fresh spinach and cook for about 1 minute, just until wilted.
  4. In a separate bowl, whisk the eggs together with a pinch of salt and pepper until fully mixed.
  5. Pour the egg mixture into the skillet over the sautéed vegetables.
  6. Gently stir the eggs until they’re scrambled to your desired consistency. Serve immediately.

Notes

For added flavor, top with cheese or serve with whole-grain toast.
