Delicious chicken breasts filled with savory mushroom and cream cheese, perfect for impressing guests or cozy dinners.

  • 2 large chicken breasts
  • 2 cups mushrooms, finely chopped
  • 1 cup spinach, chopped (optional)
  • 1/2 cup cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh herbs (thyme or parsley) for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat some olive oil in a pan over medium heat. Add the chopped mushrooms and sauté for about 5-7 minutes until soft and slightly browned. If using spinach, toss it in next and stir well. Then, add garlic powder, onion powder, salt, and pepper. Mix in the cream cheese until well combined.
  3. Carefully butterfly the chicken breasts, seasoning each side with salt and pepper. Stuff them generously with the mushroom mixture, securing with toothpicks if necessary.
  4. In the same pan, sear the stuffed chicken for 3-4 minutes on each side until golden brown.
  5. Transfer the chicken to a baking dish and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Once cooked, let the chicken rest for about 5 minutes before slicing. Garnish with fresh herbs and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven at 350°F (175°C).
