Ingredients

  • 1 cup rolled oats
  • 1 cup milk (dairy or non-dairy)
  • 1 large egg
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon butter or oil, for cooking

Instructions

  1. Begin by combining all ingredients, except for the butter or oil, in a blender. Blend until smooth.
  2. Allow the batter to rest for 5-10 minutes so the oats absorb the liquid.
  3. Heat a lightly oiled griddle or crepe pan over medium heat.
  4. Pour 1/4 cup of the batter onto the hot surface. Use the back of a spoon to spread it thinly into a circular shape.
  5. Cook for 2-3 minutes on each side, or until the crepes are golden brown.
  6. Repeat this process with the remaining batter.
  7. Serve immediately, topped with your favorite ingredients.
