Quick and easy breakfast biscuits that combine ham, cheese, and nutritious ingredients like cottage cheese and spinach.

  • 1 ½ cups cottage cheese, liquid drained
  • 4 eggs
  • 2 cups spinach, finely chopped
  • 1 ½ cups shredded cheddar cheese, divided
  • ⅓ cup chives, diced
  • 2 cups ham, diced
  • 1 ½ cups all-purpose flour
  • 1 Tbsp baking powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Whisk the cottage cheese and eggs together in a large bowl until smooth.
  3. Add the finely chopped spinach, 1 cup of shredded cheddar cheese, chives, and diced ham. Mix until combined.
  4. Incorporate the flour, baking powder, garlic powder, onion powder, and salt. Mix gently; do not overmix.
  5. Shape the mixture into 12 equal balls and place them on the prepared baking sheet.
  6. Flatten each ball to create 1 ½-inch-thick biscuits.
  7. Sprinkle the remaining cheddar cheese on top of each biscuit.
  8. Bake for 23-25 minutes until golden brown and cooked through.
  9. Let them cool for 5-10 minutes before serving.

Notes

Store leftovers in an airtight container for up to 4 days in the refrigerator, or freeze for up to 3 months.
