One-Pan Balsamic Chicken

A quick and easy weeknight dinner featuring tender chicken marinated in a rich balsamic glaze, complemented by cherry tomatoes and spinach.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 teaspoon dried Italian herbs (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together balsamic vinegar, olive oil, honey, minced garlic, salt, and pepper until well combined.
  3. Add the chicken breasts to the bowl, ensuring they are thoroughly coated in the marinade. For enhanced flavor, let them marinate for 15-30 minutes if you have the time.
  4. Transfer the marinated chicken breasts to a large oven-safe pan and pour any leftover marinade over them.
  5. Scatter the halved cherry tomatoes around the chicken in the pan.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked.
  7. In the last 5 minutes of cooking, add the spinach to the pan and allow it to wilt.
  8. Once done, remove from the oven and serve warm, drizzling the delicious pan juices over the chicken.

Notes

Marinate the chicken overnight for deeper flavor. Feel free to substitute ingredients as desired.
