  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts generously with salt and pepper and add them to the skillet. Cook for about 5-7 minutes on each side until golden brown.
  3. Remove the chicken from the skillet and set aside on a plate.
  4. Add the minced garlic and chopped sun-dried tomatoes to the same skillet. Sauté for 1-2 minutes until fragrant.
  5. Pour in the chicken broth and bring the mixture to a simmer.
  6. Stir in the heavy cream and dried Italian herbs, mixing until well combined. Return the chicken to the skillet.
  7. Cook the chicken for an additional 10-15 minutes or until cooked through and the sauce has thickened.
  8. Garnish with fresh basil before serving and enjoy!

For a lighter dish, consider substituting heavy cream with half-and-half. This recipe is gluten-free and can be adjusted for vegetarian options using firm tofu.
