A delightful one-pan meal combining tender chicken, creamy orzo, and sun-dried tomatoes, perfect for impressing loved ones or quick weeknight dinners.

  • pounds boneless skinless chicken (cut into 1-inch pieces)
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon olive oil
  • 2 teaspoons garlic (minced)
  • 1 teaspoon paprika
  • 2 teaspoons dried Italian seasoning
  • 1 cup sun-dried tomatoes (drained and chopped)
  • 1 cup dry orzo pasta
  • 2½ cups chicken broth
  • 1 cup half-and-half
  • 1 cup grated parmesan cheese
  • ½ cup fresh basil (chopped)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season chicken pieces with salt and pepper. Add them to the skillet and cook for 6-8 minutes, stirring occasionally until fully cooked.
  3. Add minced garlic, paprika, Italian seasoning, and sun-dried tomatoes to the pan. Sauté for about 2 minutes while stirring.
  4. Stir in the dry orzo pasta and chicken broth. Bring the mixture to a boil. Once boiling, reduce heat, cover, and simmer for 10-12 minutes, until the orzo is tender.
  5. Pour in half-and-half, stir to combine, and adjust the creaminess as desired.
  6. Mix in grated parmesan cheese and fresh basil until the cheese melts and the basil wilts.
  7. Taste and season as needed. Serve hot and enjoy!

Notes

For extra flavor, consider adding red pepper flakes or using different cheeses. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
