A delightful and creamy chicken dish that’s perfect for date nights or family dinners, featuring seared chicken in a luscious garlic and sun-dried tomato sauce.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tablespoons olive oil
  • Salt and freshly cracked black pepper to taste
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • ⅔ cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon red pepper flakes (optional)
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the chicken breasts generously with salt, pepper, and Italian seasoning.
  3. Sear the chicken for about 5-6 minutes on each side, until golden and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  5. Stir in the chopped sun-dried tomatoes and continue cooking for an additional minute.
  6. Pour in the heavy cream and chicken broth, allowing it to simmer while scraping up any flavorful bits from the bottom of the pan.
  7. Stir in the Parmesan cheese until it melts smoothly. Return the chicken to the skillet and let it simmer for another 2-3 minutes.
  8. If desired, stir in red pepper flakes to taste.
  9. Serve the chicken drizzled with the creamy sauce and garnish with fresh basil leaves.

Notes

Best served over pasta or with mashed potatoes. Store leftovers in an airtight container for up to 3 days.
