A delightful dish combining succulent chicken breasts with a creamy, luxurious sauce, perfect for weeknight dinners or romantic date nights.

Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 3 Tbsp. extra-virgin olive oil, divided
  • Kosher salt
  • Black pepper
  • 2 cloves garlic, finely chopped
  • 1 Tbsp. fresh thyme leaves
  • 1 tsp. crushed red pepper flakes
  • 3/4 cup low-sodium chicken broth
  • 1/2 cup chopped sun-dried tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup finely grated Parmesan
  • Torn fresh basil for garnish

Instructions

  1. Season both sides of the chicken breasts generously with salt and pepper.
  2. Heat 2 tablespoons of olive oil over medium heat in a large skillet. Once hot, add the chicken breasts. Cook them for about 5-7 minutes on each side until golden brown and fully cooked. Once done, transfer the chicken to a plate.
  3. Add the remaining tablespoon of olive oil to the same skillet. Sauté the garlic for about 30 seconds until fragrant, then stir in thyme, crushed red pepper flakes, and sun-dried tomatoes.
  4. Pour in the chicken broth, scraping up any delicious bits stuck at the bottom of the pan. Let it simmer for 2-3 minutes. Then, stir in the heavy cream and Parmesan until smooth and combined.
  5. Return the chicken to the skillet, coating it well in the sauce, and let everything heat through for another 3-5 minutes.
  6. Garnish with torn fresh basil, serve warm, and enjoy!

Notes

For a different twist, substitute sun-dried tomatoes with chopped olives or artichokes.
