  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup melted butter
  • 2 large eggs
  • 1 cup blueberries (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or baking dish.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. Mix the buttermilk, melted butter, and eggs until well combined in another bowl.
  4. Add the wet ingredients to the dry ingredients, stirring until just combined. If using, fold in the blueberries.
  5. Pour the batter into the prepared muffin cups or baking dish.
  6. Bake for 20-25 minutes or until the tops are golden and a toothpick comes out clean.
  7. Allow to cool slightly before carefully removing from the pan.
