Delightful bite-sized pancake poppers that are perfect for brunch or breakfast.

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Maple syrup or berries for topping

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, egg, and melted butter until well combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined; do not overmix.
  5. Fill each muffin cup about 2/3 full with the batter, allowing room for rising.
  6. Bake for 12-15 minutes or until golden brown. A toothpick inserted in the center should come out clean.
  7. Once done, remove from the oven and let them cool slightly before serving.
  8. Serve warm, drizzled with maple syrup or topped with fresh berries.

Notes

For a healthier twist, feel free to use whole wheat flour or almond milk for a dairy-free version.
