Irresistibly crispy on the outside and juicy on the inside, this Parmesan-Crusted Chicken is the perfect crowd-pleaser for any meal.

  • 4 chicken breasts (about 1 to 1.25 lb total; boneless, skinless)
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plain or panko)
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • 23 tablespoons olive oil for frying

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly oil a baking dish or line it with foil for easy cleanup.
  2. Combine breadcrumbs, grated Parmesan, garlic powder, onion powder, and a pinch of salt and pepper in a medium bowl.
  3. Beat the eggs in another bowl until smooth.
  4. Pat the chicken breasts dry. If uneven in thickness, gently pound them to achieve uniformity.
  5. Dip each chicken breast into the beaten eggs, allowing any excess to drip off.
  6. Press the chicken into the breadcrumb mixture, coating it evenly. Repeat with all chicken breasts.
  7. Heat olive oil in a large skillet over medium heat. Once hot, lay the coated chicken in the skillet. Brown for about 3–4 minutes on each side until golden and crisp.
  8. Transfer the browned chicken to the prepared baking dish and bake in the oven for 20–25 minutes until the internal temperature reaches 165°F (74°C).
  9. Allow the chicken to rest for 3–5 minutes before slicing and serving.

Notes

For an even crispier coating, consider double breading the chicken. Experiment with different spices for added flavor.
