A delightful baked oatmeal combining ripe bananas and creamy peanut butter, perfect for breakfast or a healthy snack.

Ingredients

  • 1 large spotty banana (mashed)
  • ½ cup creamy all-natural peanut butter
  • 3 tbsp real maple syrup (or honey)
  • 1 ¾ cups unsweetened almond milk or oat milk
  • 1 large egg (or 1 tbsp ground flaxseed with 3 tbsp of warm water for vegan option)
  • 2 tsp vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • ½ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9-inch square baking dish.
  2. Mash the banana until smooth in a large bowl.
  3. Whisk in the peanut butter, maple syrup, almond milk, egg (or flaxseed mixture), and vanilla extract until well combined.
  4. Gradually add the oats, cinnamon, baking powder, and salt. Stir until evenly mixed; if the mixture is too thick, add a splash more milk to reach your desired consistency.
  5. Pour the mixture into the prepared baking dish, spreading it evenly.
  6. Bake for 35 to 45 minutes, or until the top is golden and the center is set.
  7. Allow it to cool for 5 minutes before slicing. For a fun finishing touch, drizzle with extra peanut butter and add sliced bananas if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave or oven.
