Juicy and crispy chicken thighs roasted to perfection with a simple spice mix.

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 lemon, sliced (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels.
  3. In a bowl, combine the olive oil, salt, black pepper, garlic powder, paprika, and dried thyme.
  4. Rub the seasoning evenly on the chicken thighs.
  5. Place the seasoned thighs skin-side up on a baking sheet lined with parchment paper.
  6. Optionally, arrange lemon slices around the chicken.
  7. Bake for 35-45 minutes, until golden brown and the internal temperature reaches 165°F (74°C).
  8. Let the chicken rest for about 5 minutes before serving.

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months.
