Delicious and nutritious protein-packed muffins made with ripe bananas and oats, perfect for a quick breakfast or snack.

Ingredients

  • 2 ripe bananas
  • 1 cup protein powder
  • 1/2 cup oats
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond milk
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas until smooth in a large bowl.
  3. Add protein powder, oats, honey or maple syrup, almond milk, baking soda, baking powder, cinnamon, and salt. Mix until perfectly combined.
  4. Fold in chopped nuts or chocolate chips if desired.
  5. Divide the batter evenly among the muffin cups, filling them about 3/4 full.
  6. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  7. Cool for a few minutes before transferring to a wire rack.
