Delicious and nutritious protein muffins perfect for breakfast or a snack, packed with wholesome ingredients.

Ingredients

  • 1 cup rolled oats or oat flour
  • 1 scoop protein powder (vanilla or chocolate)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 pinch salt
  • 2 eggs
  • ½ cup Greek yogurt
  • ¼ cup milk (any kind)
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ½ cup add-ins (chocolate chips, berries, or nuts)

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare your muffin tray with liners or grease it lightly.
  2. Combine the rolled oats, protein powder, baking powder, baking soda, and pinch of salt in a large mixing bowl.
  3. Whisk the eggs in a separate bowl and then add the Greek yogurt, milk, honey or maple syrup, and vanilla extract. Mix until smooth.
  4. Gradually pour the wet mixture into the dry ingredients, stirring gently to form a thick batter.
  5. Fold in your chosen add-ins to distribute evenly throughout the batter.
  6. Spoon the batter into the prepared muffin cups, filling them about three-quarters full.
  7. Bake for 15-20 minutes, or until golden and a toothpick comes out clean from the center.
  8. Cool slightly before removing the muffins from the tray to serve.

Notes

Store in an airtight container at room temperature for up to three days, or refrigerate for a week.
