These Protein Pancakes are a healthy twist on a classic breakfast favorite, combining protein pancake mix with creamy Greek yogurt and sweet strawberries for a delicious start to your day.

Ingredients

  • 1 cup protein pancake mix (~100g)
  • 3/4 cup water or milk
  • 1/2 cup nonfat Greek yogurt
  • 1 Tbsp PBFit (mixed with water)
  • 75g fresh strawberries, sliced
  • 12 tbsp maple syrup

Instructions

  1. Combine the protein pancake mix with your choice of water or milk until smooth.
  2. Heat a non-stick skillet over medium heat.
  3. Pour the pancake batter onto the skillet in your desired sizes.
  4. Cook until bubbles form on the surface. Flip and cook until golden brown.
  5. Mix PBFit with a little water to create a peanut butter sauce.
  6. Serve the pancakes topped with Greek yogurt, fresh strawberries, and a drizzle of maple syrup.

Notes

For fluffier pancakes, let the batter rest for a few minutes before cooking. Adjust sweetness by adding more or less maple syrup.
