A delightful casserole combining the classic flavors of French toast with the convenience of a make-ahead dish, filled with juicy blueberries.

  • 1 loaf of day-old brioche or challah bread, cubed
  • 2 cups fresh blueberries
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Butter or cooking spray for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish thoroughly with butter or cooking spray.
  2. Evenly distribute the cubed bread in the baking dish, then sprinkle the fresh blueberries on top.
  3. In a large mixing bowl, whisk together the eggs, milk, maple syrup, vanilla extract, ground cinnamon, and salt until the mixture is well combined.
  4. Pour the egg mixture over the bread and blueberries, ensuring that all pieces are soaked.
  5. Cover the dish with foil and let it sit for about 30 minutes at room temperature. For a more intense flavor, refrigerate it overnight.
  6. Bake the casserole (covered) for about 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes until it’s golden brown and has set.
  7. Allow it to cool slightly before serving.
