A comforting and effortless one-pot ranch chicken recipe that’s perfect for busy weeknights.

  • 4 boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup chicken broth
  • 1/2 cup sour cream
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (optional for searing)
  • 1 cup shredded cheddar cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Optional Searing: Heat olive oil in a pan over medium heat. Sear the chicken breasts for about 2-3 minutes on each side until they develop a nice golden-brown crust.
  2. Prepare the Sauce: In your crock pot, combine the cream of chicken soup, ranch seasoning mix, chicken broth, garlic powder, onion powder, and black pepper. Stir well.
  3. Add the Chicken: Gently place the seared chicken breasts into the crock pot, ensuring they’re well coated with the sauce mixture.
  4. Cook: Cover the crock pot and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is thoroughly cooked and tender.
  5. Shred the Chicken: Once cooked, use two forks to shred the chicken right in the pot, mixing it thoroughly with the sauce.
  6. Finish with Sour Cream: Stir in the sour cream for a creamy finish.
  7. Garnish and Serve: Before serving, sprinkle with shredded cheddar cheese and fresh parsley if desired.

Notes

Serve over rice, mashed potatoes, or in tortillas. Can store in an airtight container for 3-4 days, or freeze for up to 3 months.
