A delightful and hearty sausage and egg casserole, perfect for brunch or weeknight dinners.

Ingredients

  • 1 pound sausage
  • 6 eggs
  • 1 cup milk
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 cup bread cubes (optional)
  • 1 cup chopped vegetables (optional, like bell peppers or spinach)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the sausage until browned. Drain any excess fat.
  3. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  4. If desired, add the optional bread cubes and chopped vegetables to the skillet with the sausage and stir to mix.
  5. Pour the egg mixture over the sausage and veggies. Stir in the shredded cheese.
  6. Transfer the mixture to a greased baking dish and spread evenly.
  7. Bake for 25-30 minutes, or until the eggs are set and the top is golden brown.
  8. Allow to cool for a few minutes before slicing and serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the oven or microwave.
