  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
  2. Cook the ground sausage in a skillet over medium heat until browned and fully cooked, about 5-7 minutes.
  3. Whisk the eggs together in a bowl, seasoning with salt and pepper to your liking.
  4. Add the cooked sausage to the bowl with eggs, along with the shredded cheese. Stir to combine.
  5. Pour the mixture evenly into each muffin tin cup, filling about three-quarters full.
  6. Bake for 20-25 minutes or until the eggs are set and the tops are light golden brown.
  7. Allow the bites to cool slightly before removing them from the muffin tin.
  8. Serve warm with a side of hot sauce or avocado if desired.
