Instructions

  1. In a pot, bring the water or vegetable broth to a boil.
  2. Add the rolled oats and reduce the heat to a gentle simmer. Cook for about 5 minutes, stirring occasionally to prevent sticking.
  3. While the oats are simmering, scoop out the ripe avocado into a bowl. Mash it lightly with a fork until creamy.
  4. Once the oats are cooked, stir in the olive oil and season with salt and pepper to your liking.
  5. Serve the oatmeal in bowls and generously top with the mashed avocado, halved cherry tomatoes, and diced cucumber. For an extra flavor kick, sprinkle chili flakes and fresh herbs over the top. Enjoy!
