Ingredients

Scale
  • 1 cup cottage cheese
  • 2 eggs
  • 1 cup whole wheat flour
  • 1 cup grated cheese (cheddar or mozzarella)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mixed vegetables (e.g., spinach, bell peppers, onions, carrots)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with liners or grease it.
  2. In a large mixing bowl, whisk together the cottage cheese, eggs, and olive oil until everything is well blended.
  3. In a separate bowl, combine the whole wheat flour, baking powder, baking soda, salt, and garlic powder (if using).
  4. Gradually fold the dry ingredients into the wet mixture. Stir gently until just combined; be careful not to overmix.
  5. Gently fold in the grated cheese and mixed vegetables, ensuring an even distribution.
  6. Spoon the batter evenly into your prepared muffin tin, filling each cup about three-quarters full.
  7. Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool slightly before removing them from the tin. Enjoy!
