  • 3 large eggs
  • 1 cup shredded cheese (cheddar or mozzarella)
  • ½ cup oat flour (or all-purpose flour)
  • ½ tsp baking powder
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • Salt (to taste)
  • ½ cup diced bell peppers
  • ½ cup chopped spinach or zucchini
  • Olive oil spray (for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin lightly or line it with muffin liners.
  2. Beat the eggs in a large mixing bowl until smooth and frothy.
  3. Stir in the cottage cheese and shredded cheese until blended.
  4. Add oat flour, baking powder, garlic powder, black pepper, and salt to taste. Mix until just combined.
  5. Incorporate diced bell peppers and chopped spinach or zucchini into the batter.
  6. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  7. Bake for 20-25 minutes until golden.
  8. Cool slightly before transferring to a wire rack.
