  • 1 cup fresh spinach
  • 1 cup Greek yogurt
  • 1 cup shredded cheese
  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the chicken sausage in a skillet over medium heat until browned, about 5-7 minutes.
  3. Add the spinach and stir until wilted, roughly 2-3 minutes.
  4. Combine flour, baking powder, salt, and pepper in a mixing bowl.
  5. Add Greek yogurt and olive oil to the flour mixture and mix until a cohesive dough forms.
  6. Fold in the cooked sausage, spinach, and cheese until well combined.
  7. Scoop generous spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 15-20 minutes, or until golden brown and puffed up.
  9. Cool slightly on a wire rack before serving.
