Delicious and nutritious egg biscuits, perfect for breakfast or a snack, that are easy to customize and freeze well.

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1 cup eggs (about 4 large eggs)
  • 1/2 cup milk
  • 1/2 cup cooked and crumbled sausage or bacon (optional)
  • 1 tablespoon olive oil or melted butter

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with parchment paper.
  2. Combine the flour, baking powder, and salt in a large bowl.
  3. Beat together the eggs, milk, and olive oil or melted butter in a separate bowl until well mixed.
  4. Pour the wet ingredients into the dry mixture, stirring gently just until combined.
  5. Fold in the shredded cheese and any optional meat, such as crumbled sausage or bacon.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 15-20 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Allow to cool slightly before removing from the tin. Store leftovers in an airtight container or freeze for later.
