This slow-cooked chicken dish transforms simple ingredients into a delicious, comforting meal that is perfect for busy weeknights or gatherings.

  • 4 boneless, skinless chicken breasts
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/3 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the chicken breasts dry and season them with salt, pepper, and smoked paprika.
  2. Heat olive oil in a skillet over medium-high heat. Sear the chicken for about 3 minutes on each side until golden brown.
  3. Place sliced onions and minced garlic in the crockpot as the base layer.
  4. Lay the seared chicken on top of the onions and garlic.
  5. Whisk together chicken broth, soy sauce, honey, Dijon mustard, and thyme in a bowl. Pour this sauce evenly over the chicken.
  6. Close the crockpot lid and cook on low for 6-7 hours, or on high for 3-4 hours.
  7. After cooking, remove the chicken. Mix cornstarch and water to create a slurry, then stir this into the liquid in the crockpot. Cook on high for an additional 10-15 minutes until thickened.
  8. Plate the chicken, spoon the thickened sauce on top, and garnish with fresh parsley.

Notes

For a healthier twist, use low-sodium soy sauce. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
