A delicious and easy way to start your day with all your breakfast favorites in one warm, cheesy package. Perfect for brunch, meal prep, or weeknight dinners.

  • 6 large flour tortillas
  • 8 large eggs
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup cooked breakfast sausage or bacon (optional)
  • 1 cup diced bell peppers and onions
  • Salt and pepper to taste
  • Cooking spray or olive oil for greasing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Sauté bell peppers and onions: In a large skillet, add a little oil and sauté the bell peppers and onions over medium heat until they soften, about 4-5 minutes.
  3. Add meat, if using: If you’re including sausage or bacon, toss it in the skillet and warm through.
  4. Prepare the egg mixture: In a bowl, beat the eggs and season with salt and pepper. Pour this mixture into the skillet, stirring gently until fully cooked.
  5. Layer the tortillas: On a large sheet pan, lay out three tortillas. Spread the egg mixture evenly over them, sprinkle with cheese, and top with the remaining tortillas.
  6. Bake: Lightly spray the tops with cooking spray, then bake in the oven for 10-12 minutes or until they are golden and crispy.
  7. Serve: Remove from the oven and slice into wedges for serving.

Notes

For best results, don’t overcook the eggs and experiment with different cheeses for unique flavors.
