Simple Breakfast Quesadillas

A quick and delicious breakfast option with scrambled eggs and melted cheese in crispy tortillas.

Ingredients

  • 2 large flour tortillas
  • 3 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a bowl, whisk together the eggs and milk. Add salt and pepper for seasoning.
  2. Heat a non-stick skillet over medium heat and melt the butter.
  3. Pour the egg mixture into the skillet and scramble until cooked through. Remove from heat and set aside.
  4. If needed, wipe the skillet clean. Place one tortilla in the skillet on medium-low heat.
  5. Sprinkle half of the cheese over the tortilla. Top with the scrambled eggs, followed by the remaining cheese.
  6. Place the second tortilla on top of the filling.
  7. Cook for 2 to 3 minutes until the bottom is golden brown. Carefully flip the quesadilla.
  8. Cook the other side for another 2 to 3 minutes until golden and the cheese is melted.
  9. Remove from heat, slice into wedges, and serve immediately.

Notes

For a healthier twist, use whole wheat tortillas or swap cheddar for pepper jack. Serve with salsa or sour cream for dipping.
