Delicious and nutritious oatmeal cookies perfect for a quick breakfast or snack, packed with protein and naturally sweetened.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup protein powder
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the rolled oats, protein powder, baking soda, and salt in a mixing bowl.
  3. Add the almond butter, honey (or maple syrup), and vanilla extract to the dry ingredients. Mix until well combined.
  4. Fold in the chocolate chips if using.
  5. Scoop tablespoon-sized balls of the mixture onto a baking sheet lined with parchment paper.
  6. Flatten each ball slightly with the back of a spoon.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow to cool before serving. Enjoy as a quick breakfast or snack!

Notes

These cookies can be stored in an airtight container at room temperature for up to a week. They can also be refrigerated for up to two weeks.
