A comforting and delicious slow cooker chicken pot pie that’s easy to make and packed with flavor.

Ingredients

  • 1 pound chicken breasts, cubed
  • 2 cups mixed vegetables (carrots, peas, corn, green beans)
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 tbsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups Biscuit Mix
  • 3/4 cup milk

Instructions

  1. Combine Ingredients: Start by adding the cubed chicken, mixed vegetables, cream of chicken soup, chicken broth, onion powder, garlic powder, dried thyme, salt, and black pepper into your slow cooker. Stir well to combine everything evenly.
  2. Prepare Biscuit Batter: In a separate bowl, mix the Biscuit Mix with milk. Stir gently until just combined; a few lumps are okay.
  3. Layer the Biscuits: Spoon dollops of the biscuit mixture over the chicken and vegetable mix in the slow cooker.
  4. Slow Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is thoroughly cooked and the biscuits are fluffy.

Notes
