A comforting and easy slow cooker recipe featuring tender chicken paired with Yukon gold potatoes and baby carrots in a rich garlic butter sauce.

  • 1 1/2 lbs boneless skinless chicken tenders
  • 1 lb baby carrots
  • 1 1/2 lbs Yukon gold potatoes (cut into wedges)
  • 1/2 cup salted butter (melted)
  • 1 Tbsp minced garlic
  • Salt and pepper to taste
  • 1 tsp dried thyme leaves
  • 1 tsp dried parsley

Instructions

  1. Begin by placing the chicken tenders in the center of your slow cooker.
  2. Next, arrange the potato wedges on one side and scatter the baby carrots on the other.
  3. In a separate bowl, mix together the melted butter, minced garlic, salt, pepper, thyme, and parsley until it’s well combined.
  4. Pour the delicious garlic butter mixture evenly over the chicken and vegetables.
  5. Cover the slow cooker and cook on HIGH for 4 hours or LOW for 6–8 hours, depending on your schedule.
  6. Once cooked, serve hot with your favorite sides.

Notes

For crispy chicken, consider broiling it for a few minutes after cooking. Adjust herbs to taste and add a splash of lemon juice before serving for extra brightness.
