  • 2 cups chicken broth
  • 1 lemon (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

  • Fresh parsley (for garnish)

Instructions

  1. Place the rice in the bottom of your slow cooker.
  2. Pour the chicken broth over the rice, ensuring it’s well distributed.
  3. Season each chicken breast generously with salt, pepper, thyme, and rosemary. Lay them on top of the rice.
  4. In a separate bowl, mix the lemon juice and zest with the minced garlic until well combined.
  5. Pour this zesty mixture evenly over the chicken, making sure each piece is coated.
  6. Cover the slow cooker and set it to cook on low for 4-6 hours.
  7. Once finished, fluff the rice gently with a fork and serve the succulent chicken on top, garnished with fresh parsley.

Notes

For a twist, substitute brown rice for white rice, adjusting the cooking time and liquid as needed. Add vegetables like peas or carrots during the last hour for added nutrition.
