A comforting dish that combines tender chicken, creamy sauce, and fluffy rice, perfect for weeknight dinners or cozy weekend feasts.

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon thyme
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for about 5-7 minutes on each side until golden and cooked through. Remove the chicken and set aside.
  3. In a saucepan, bring chicken broth and 1/2 teaspoon salt to a boil. Add the rice, reduce the heat, and cover, letting it simmer for 15-20 minutes until tender. Fluff with a fork.
  4. In the same skillet, melt unsalted butter over medium heat and add flour. Whisk for 1-2 minutes.
  5. Gradually whisk in whole milk and the remaining chicken broth until the sauce thickens and is smooth.
  6. Stir in garlic powder, thyme, and both cheeses until melted and creamy.
  7. Return the chicken to the skillet and generously spoon the sauce over it.
  8. Serve over rice and garnish with freshly chopped parsley.

Notes

For a beautiful presentation, serve in shallow bowls. Pair with steamed green vegetables or a fresh garden salad.
