Delightful pancakes infused with the sweetness and warmth of churros, perfect for breakfast or brunch.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup cinnamon sugar (for topping)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt until combined.
  2. In a separate bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.
  3. Combine the wet and dry ingredients, stirring gently until just mixed. Avoid overmixing; a few lumps are okay!
  4. Heat a non-stick skillet over medium heat and lightly grease it with butter or cooking spray.
  5. For each pancake, pour 1/4 cup of batter onto the skillet.
  6. Cook until bubbles form on the surface of the batter, then flip and cook until golden brown on the other side.
  7. Remove from the skillet and immediately sprinkle with cinnamon sugar.
  8. Continue with the remaining batter, serving warm while the pancakes are still fresh.

Notes

Serve stacked high with maple syrup and fresh fruit for a delightful breakfast experience.
