Juicy chicken breasts filled with a creamy, cheesy blend of spinach, perfect for a quick weeknight dinner or entertaining.

  • 2 boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped spinach, softened cream cheese, shredded mozzarella, grated Parmesan, minced garlic, Italian seasoning, salt, and pepper. Blend until smooth.
  3. Carefully cut a pocket into each chicken breast without slicing all the way through.
  4. Generously fill each chicken breast with the spinach and cheese mixture, packing it in well.
  5. Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  6. Transfer the chicken to a baking dish and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Once done, let the chicken rest for a few minutes before slicing. Enjoy your hearty meal!

Notes

Feel free to substitute low-fat cream cheese or other cheeses to suit your taste. Serve with salad, mashed potatoes, or roasted vegetables.
