A delightful blend of tender chicken and sweet pineapple in a savory sauce, perfect for busy weeknights.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (canned or fresh)
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Cooked rice for serving
  • Chopped green onions for garnish (optional)

Instructions

  1. In a bowl, mix together the soy sauce, brown sugar, ketchup, minced garlic, grated ginger, and red pepper flakes if using.
  2. Place the chicken breasts in the crock pot.
  3. Pour the prepared sauce over the chicken, making sure they’re well coated.
  4. Top the chicken with pineapple chunks.
  5. Cover the crock pot and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is thoroughly cooked.
  6. Once cooked, shred the chicken using two forks right in the sauce, mixing it well.
  7. Serve over cooked rice and garnish with chopped green onions if desired.

Notes

For added flavor, allow chicken to marinate in the sauce for at least an hour before cooking. You can also sear the chicken breasts before placing them in the crock pot.
