  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground ginger
  • 1 teaspoon cornstarch (optional, for thickening)
  • 1 tablespoon water (optional, for thickening)
  • Sliced green onions (for garnish)
  • Pineapple chunks (for garnish)

Instructions

  1. Place the chicken breasts directly into your slow cooker.
  2. In a bowl, whisk together the pineapple juice, soy sauce, brown sugar, ketchup, minced garlic, and ground ginger until well combined.
  3. Pour the mixture over the chicken breasts in the slow cooker.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and fully cooked.
  5. If you prefer a thicker sauce, mix cornstarch and water to create a slurry and stir it into the crock pot during the last 30 minutes of cooking.
  6. Once cooked, shred the chicken if desired and serve over rice, garnished with sliced green onions and pineapple chunks.
