A nutritious and satisfying breakfast made with baked sweet potatoes, creamy Greek yogurt, banana, and honey.

  • 2 large sweet potatoes
  • 1 cup Greek yogurt
  • 1/4 cup almond milk
  • 1 banana
  • 1 tablespoon honey
  • 1/2 teaspoon cinnamon
  • Chopped nuts or seeds for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and pierce them with a fork several times.
  3. Bake the sweet potatoes for 45-60 minutes, until they are tender.
  4. Let them cool slightly, then slice them open.
  5. In a mixing bowl, mash the sweet potato flesh with Greek yogurt, almond milk, honey, and cinnamon until smooth.
  6. Serve in bowls, topping with banana slices and chopped nuts or seeds.

Notes

To make this recipe dairy-free, substitute Greek yogurt with plant-based yogurt and use any milk of your choice.
