A vibrant and nutritious dish combining sweet potatoes and fresh oranges, perfect for any mealtime.

  • 2 large sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 medium oranges, peeled, segmented, and cut into chunks
  • 2 cups baby spinach leaves
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large eggs
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh cilantro or parsley, chopped

Instructions

  1. Preheat your oven to 425°F and line a large sheet pan with parchment paper.
  2. Combine the diced sweet potatoes, red bell pepper, and red onion in a bowl. Drizzle with olive oil and seasonings.
  3. Spread the mixture onto the sheet pan and roast for 20 minutes, stirring halfway through.
  4. Fold in the orange segments and baby spinach after roasting.
  5. Create small wells and crack an egg into each well.
  6. Return the pan to the oven and roast for an additional 8 to 10 minutes.
  7. Sprinkle with crumbled feta cheese and fresh herbs before serving.

Notes

For extra crunch, top with toasted nuts or seeds. Enjoy on its own or pair with crusty bread.
